1 tablespoon extra-virgin olive oil 1 batch store-bought pizza dough (use whole wheat, if available) 2 pounds white or red grapes 1/2 cup light brown sugar Leaves from 1 sprig rosemary Freshly ground black pepper
Directions
Preheat the oven to 450°F. Lightly oil a 10 by 15-inch baking sheet, then use your hands to stretch out the pizza dough on the prepared baking sheet.
Lightly crush the grapes in a bowl, and then mix them with half of the brown sugar. Spread them over the dough, then press down with your fingers so that they go into the dough a little. Cover the baking sheet with a cotton cloth and leave to rest for 30 minutes so that the dough has time to rise again.
Sprinkle the focaccia with the remaining brown sugar, garnish with a few rosemary leaves and top with some ground black pepper. If you can find rosemary leaves with flowers, you can also add those once it has baked. Bake until the dough turns golden brown. This will take around 25 minutes. Drizzle with olive oil.
